Have you ever tried to make a creme brulee with salt instead of sugar? I have. I was slammed and of course my table wanted the dessert that would take the longest to make. So I rushed into the back and pull out a creme brulee and the torch. We have two big buckets in the back, both unmarked. One is salt, one is sugar. I learned a few things that day. Salt looks like sugar. Salt does not burn. Salt tastes like shit on creme brulee.
